Is it okay if I combine the garlic, rosemary and olive oil overnight, then pan roast my potatoes tomorrow?

Question: I recognize I should wait to cut the potatoes until tomorrow (unless I soak them in old water overnight) but I wanted to get a little bit of a head start on the other ingredients. Will letting them sit overnight "infuse" the flavor into the olive oil, or is that legitimate

So here’s the grapple with – I remarkably pine for to give you all a week’s merit of Easter-inspired recipes.  But, the fashion is, I am exactly not at all in the attitude for the normal Easter foods.  It may be because I’m on call during the real Easter event so I won’t be cooking for it, but I about it’s more an climax of the sick.  Existence has sprung (at least a mini), and this has me in the feeling ready for all kinds of unsophisticated, hare-brained foods – ham is not one of them.  The whole common furlough spread fair isn’t inspiring me at all this year.  But who says you have to have ham on Easter?  I say become whatever you like.  And what I’ve been making and loving lately is this roast chicken.
