Would Gravy Master be a reasonable substitute for Marmite in a vegetarian split pea soup recipe.?
Question: Gravy Master is a spice and browning sauce that contains no meat. It seems to me that it would impart an umami idiosyncratic that is similar to Marmite. I don't want to go buy Marmite, so I am looking for a substitute.
Answer: I would say no. Gravy Master is salt sugar and veg flavors. It basically is a gravy adjunct. I very much disbelieve you would get that Umami flavor you are seeking. Maramite on the other hand is a brewer's yeast unoriginal and definitely falls into that Umami profile.
