Dale Curry became on speaking terms with with many of the recipes in her new cookbook, "New Orleans Proficient in Cooking," during her 20 years as the rations senior editor at The Times-Picayune.
Curry retired from the newspaper in 2004 and was asked to inscribe a column on archetypal Creole dishes for New Orleans armoury. The cookbook (Pelican, $19.95) includes those recipes and more, 125 in all, with splendid photos by Eugenia Uhl.
