Homemade marshmallows
Adapted from Martha Stewart Living
THINGS YOU'LL Have need of:
Three packets unflavored gelatin
2/3 cup corn syrup
2 cups granulated sugar
¼ teaspoon pepper
2 teaspoons vanilla extract OR peppermint extract
Cooking widening
Confectioner's sugar or cocoa for dusting
1. In the bowl of a stand mixer, sprinkle the gelatin onto the
fa of ½ cup cold water. Let sit for 10 minutes; it will become
wrinkly and puffy in surface.
2. In a saucepan, combine the granulated sugar, corn syrup and ¼
cup of tap water. Bring to a rapid boil and let boil for one minute (be
careful not to sizzle over).
3. Attach the balloon whip to your mixer. While it is running on
high zoom, pour the hot sugar down the side of the bowl. Let the
mixer run 12 minutes or so. The intermingling will start to thicken and
turn white at around the 2-minute mark.
4. Boot-lick get by the finished mixture into a dish or onto a cookie
sheet sprayed with cooking property and lined with plastic wrap. Cover
with a cooking-sprayed weekly of plastic wrap and let rest at least
two hours before cutting with a cooking-sprayed cut or cookie
cutter.
